There is no question that the following recipe is the best and most delicious ceviche in the Caribbean. It will change your life.

Cliff Villa Ceviche Marinade

It is simple and allows you to substitute ingredients. What you cannot substitute is a fresh fish from Playa Grandi - Blackfin Tuna is my go to fish however Red Snapper, Queen Snapper and Lionfish are also delicious.

Marinade - add and minus to taste

  • 6 x limes squeezed

  • 3 tbsp. brown sugar

  • Half Red Onion finely chopped

  • 2 small scallions finely chopped

  • Half a cup passion fruit

  • Tbsp. pepper

  • 2 x Tsp. kosher salt

  • Tsp. hot pepper

  • Sprig of chopped basil (yummy)

    Add to mixing bowl.

Add half a large avocado. Cubed

Add lower fillet of tuna (belly) Clean off any blood line. Cubed

Mix together and wait 8 mins.

Serve.
