Best Fish Soup in the Caribbean
There is no question that the following recipe is the best and most delicious soup in the Caribbean. Yummy
It is simple and allows you to substitute ingredients. What you cannot substitute is a fresh fish from Playa Grandi - Red Snapper is my go to fish however Tuna is also delicious.
Ingredients - add and minus to taste
Fillet fish and use the left-over to make the stock.
Place in pot with water and salt to boil
When the fish is thoroughly boil strain the bones and residue out and keep the clear stock.
Now the sauce …
Chop white and red onions, scallions, leaks, garlic (lots of everything)
Add dry bay leaves
Add salt, black and|or white pepper and two palm fills of paprika (important).
Add cayenne pepper to taste
Fry with olive oil on a low heat until brown
Add to stock and boil up.
Optional adds are dutch potato or lentils. (soak lentils for one hour and discard water before adding.)
When boiled and ready add more salt, paprika or pepper to taste.
